Kajjikayalu (కజ్జికాయలు) is a traditional Indian deep-fried sweet pastry from Andhra Pradesh, typically prepared during major festivals such as Sankranti, Deepavali, and Ganesh Chaturthi, as well as during weddings and other special occasions. Beloved across Andhra Pradesh and Telangana, this crescent-shaped sweet is also widely known as Gujiya in North India, Karanji in Maharashtra, and Karjikai in Karnataka, making it one of the most culturally connected festival sweets across the entire country.
Kajjikaya has a light, crisp exterior, and as you bite into this crescent-shaped sweet, its crunchy texture with the subtle sweet flavour of dried coconut and sugar laced with a tinge of cardamom stretches into every bite, leaving you very satisfied and craving for more. At GSR Foods, our Kajjikayalu are crafted with a carefully balanced filling of Bombay Rava (Sooji), Bengal Gram (Putnalu), Coconut Powder, and natural Jaggery, all seasoned with fragrant Cardamom and wrapped in a thin, crisp shell of Refined Wheat Flour, then fried to golden perfection in pure Sunflower Oil. In Andhra households, coconut powder is the signature filling ingredient that defines this regional variation, and it is this authentic Andhra style that GSR Foods stays true to, with absolutely no artificial preservatives and a genuinely homemade approach in every piece.
Instructions
- Store in an airtight container at room temperature in a cool, dry place.
- Kajjikayalu remains fresh for at least a week and can be stored for 3 to 4 weeks when sealed properly and kept away from moisture.
- Avoid storing in open, damp, or humid conditions as moisture is the biggest enemy of the crispy shell.
- Keep away from direct sunlight and heat sources, which can make the outer covering soft and oily.
- Do not stack while still warm, as trapped steam can make the shells lose their signature crunch.
- Since there are no artificial preservatives, always seal the container tightly immediately after use and use a clean, dry spoon for serving.
